The carving of fruit and vegetables evolved as part of the elaborate ritual of royal Thai cuisine, and some of the finest output is produced at the Grand Palace in Bangkok. A key feature of this art is imitation — carving fruits and vegetables into what they are not, such as carrots into roses, papayas into chrysanthemums and cucumbers into leaves. Special tiny paring knives are made for this purpose,
