Grasshopper spring roll..Folded into a packet made from a thin rice sheet, fried grasshopper is combined with rice vernicelli, bean sprouts and coriander to male a Vietnamese spring roll. It is dipped into a phuang nam sauce made from equal quantities of fermented fish sauce and rice vinegar, thinned with a little water, and blended with finely chopped chilis, ginger and a pinch of sugar.
